Firecracker Chicken

I haven’t updated in a while on how my slimming world journey has been going. I got my half stone award, so that’s 7.5 lbs in 4 weeks and I am so happy. This is the lightest I have been since I was pregnant with Heidi. I have another 10.5 to lose before I reach my target which I do want to lower again but I’m going to see how I feel at the time.

One of the meals we had this week was SpiceNtice Firecracker Chicken, which is a new flavour they have introduced and it is so tasty. My mum thinks its one of the nicest we have had from them. Shopping List

  • 3 chicken breasts
  • 2 onions
  • 3tbsp garlic paste
  • 3tbsp ginger paste
  • 1 bag of sugar snap peas
  • 1 red pepper
  • 1tbsp lime juice
  • 1 bunch spring onions
  • 2tbsp tomato sauce
  • 4tbsp dark soy sauce
  • 2tbsp hoisin sauce
  • 1tbsp plain flour
  • low cal spray
  • spiceNtice firecracker chicken spice
  • rice

Tools

  • wok
  • chopping board
  • sharp knife
  • measuring spoons
  • jug
  • bowl
  • mixing spoon

What to do

Chop the peppers, onions, spring onions and chicken.

Mix the tomato, hoisin, soy sauce, lime juice, 100ml water, firecracker spice, 1.5tbsp ginger & garlic and the chicken, leave to marinade for 15 minutes or overnight if you have time.

Heat the low cal spray and add the rest of the garlic & ginger and stir fry for a few seconds, add the chicken (leave the marinade to one side) and fry until cooked.

Add the flour to the marinade and stir until dissolved, add to the wok with 100ml water and allow to simmer. Then add the onions, peppers, spring onions and sugar snap peas and stir fry for 10 minutes.

Serve with the rice and enjoy!
