My second week on SlimmingWorld has been just as good as my first was, I had a loss of …. 1.5lbs so after two weeks that’s a loss of 4lbs and I couldn’t be happier.
I have been sticking to plan and what I found that really helped was meal planning. I do my meal plan for the week just before I do my shop then I know I have everything in for breakfast, lunch and teas.
In my previous post Blogilates I said I was going to start following this months workout calendar but I am still waiting to be cleared by the doctor this week at my 8 week post natal check up. I have a feeling they are also going to make me get my smear while I’m there which I’m not looking forward to but I know it’s best to get it done (make sure if you are due for yours you get it done ladies). So I will start this after the appointment.
Now on to the food….
Even though we have all been ill with the flu I still managed to cook and one of my favourite meals I made was Sweet Potato and Butternut Squash Soup with, wait for it Curly Kale. I know the kale doesn’t sound appealing but believe me it’s so good. All you do for the Curly Kale Crisps is spray a baking pan with fry light, lay your kale on the sheet, spray with more fry light and then sprinkle with salt. Then cook in the oven for around 6 minuets.
Now on to the soup, you will need
- 500g butternut squash
- 500g Sweet Potato
- 1 onion
- 1 litre of vegetables stock
- 1tbs nutmeg
- 1tbs cinnamon
I put all my ingredients in to my Soup maker option smooth and all of this is uncooked. It comes out perfect and this is one of the best pieces of kitchen equipment I have bought.
If you haven’t got a soup maker, cut your sweet potato and butternut squash in to squares and slice your onion. Put it all on a baking tray sprayed with fry light and sprinkled with the nutmeg and cinnamon, I would roast these for around 45 minuets until tender. Once cooled add to a food processor with the vegetable stock and blend until smooth, and wallagh that’s done!
This made about 4 portions and I had this with my kale crisps and it’s so filling. If you are following SlimmingWorld then this is sum free, bonus!
